PARC Retirement Living Wins Best of the West Again

For the second consecutive year, PARC Retirement living won the Best of the West culinary competition at the Ambleside Pier in West Vancouver. Taking place during the Harmony Arts Festival, the 6th annual consumer choice competition pairs up the top 12 BC wineries and West Vancouver restaurants against one another to see who can create the best dish and wine pairing.

Best of the West 2016 Culinary Team

Our PARC Executive Chef’s Josef Schefer from Cedar Springs, Paul Marshall from the Westerleigh, Robert Fortin from Summerhill, and Chef de Partie Daniel Boulier from Summerhill worked together to create a delicious Black Apron Angus braised beef with harissa spiced tiger prawns, fennel confit and pureed local organic yam potatoes. The succulent dish was paired with Burrowing Owl’s 2013 Athene.

With votes cast by attending guests, the sold out event drew a large crowd to take in the astounding views while sampling all twelve pairings. We are so proud our chefs could take home another win!
