James is committed to perfecting the balance between fine dining, comfort and nutrition for PARC residents. In his mind, this quest isn’t just about culinary excellence – it’s about having fun, enjoying the journey and making a positive impact on the lives of others.
With more than 24 years in the industry, James embarked on his culinary career after graduating from Vancouver Community College in 2005. He immersed himself in fine dining at the legendary Feenie’s Restaurant, where he worked his way up to Sous Chef in just two years, and then – seeking work-life balance – transitioned to Cactus Club, where he served as Sous Chef, Senior Sous Chef, and eventually Chef.
James arrived at Oceana PARC with a profound understanding of the enriching role food can play in seniors’ lives. Inspired by the happiness his father experienced dining in senior living, he finds fulfillment in bringing similar joy to PARC residents, creating memorable dining experiences by evoking nostalgia and delight with his creations.
Outside the kitchen, James spends most of his time with his family, or outdoors – hiking and camping in the summer and snowboarding in the winter.
